Tarte Tatin

Inspired by Christophe Michalak’s recipe, this seasonal pastry will seduce you,
the fondant of the apples will mix with the crispness of your dough to become one, the caramel will come to coat and bring this greedy side.


✔ Express puff pastry in 10min
💥 500 g of flour
💥400 g of very cold butter
💥1 / 2 tsp of salt
💥20 cl of water

✔150 g sugar (for the caramel)
💥 200 g caster sugar
💥8 large apples
💥1 vanilla bean
💥200 g unsalted butter
💥200ml of water
Apricot topping or jam

✔Preparation of puff pastry
♦️ Cut the butter into pieces.
♦️ ️It must be very cold, do not take it out of the fridge in advance.
♦️ ️Place the pieces in the flour and mix with your hands.
♦️ ️The goal is not to have a homogeneous paste. you have to keep good pieces of butter.
♦️ ️Dilute the salt in water
♦️ ️ Gradually add water to the flour / butter mixture while continuing to mix.
♦️ ️Then spread the dough on floured baking paper.
♦️ ️The pieces of butter will disappear as you roll out your dough.
♦️ ️Form a large rectangle and fold the dough into the wallet, you have to fold the top third towards the middle.

♦️ ️Then the bottom third over the first flap.
♦️ ️ it’s a simple trick
♦️ ️Turn the dough a quarter of a turn and repeat the operation twice: spread out in a rectangle, fold down the top third then the bottom third, turn a quarter turn, and start again.

✔Preparing the caramel
♦️ Put 150g of sugar in a saucepan and place it on the heat without stirring.
♦️ ️ mix once the sugar begins to melt
♦️ Pour the caramel into your mold or into small tart circles like me.

✔Apple preparation
♦️ Peel the apples, cut them into quarters, removing the core and the nuggets.
♦️ Place them in a saucepan with the sugar, water and vanilla pod that you have previously cut in half and scrape the seeds.
♦️ heat and cook for 10min,
your apples should be tender.
♦️ remove the apples

♦️ Roll out the puff pastry to the size of your mold.
♦️ ️Pick the dough with a fork.
♦️ Place the apples at the bottom of the mold on the hardened caramel.
♦️ ️Place the puff pastry on the apples.
♦️ Bake for 35min at 180ºC,
♦️ let cool before unmolding,
cover with topping.
