Loubia (White Aricots)

A great classic of Maghreb cuisine, this dish full of flavors will bring you all the necessary benefits for a good day.

✔ ingredients
💥250g of dry white beans
💥2 large tomatoes
💥4 cloves of garlic
💥1 pinch of pepper
💥1 / 2 tsp of turmeric
💥1 / 2 tsp cumin
💥 1 drizzle of olive oil
💥3 tbsp of tomato paste
💥1 tbsp chopped parsley and cilantro
💥2 large glasses of water
💥1 pinch of salt

♦ ️Put the white beans in a bowl of water overnight.

💥1 lemon
💥1 sprig of thyme
💥1 bay leaf
💥10 cl of olive oil
💥2 clove of garlic
💥1 / 2tsp cumin
💥1 cup of sweet or spicy harissa according to your taste
Chopped parsley / coriander

✔ fish preparation
♦️ ️After having crushed the bay leaf and crumbled the thyme, mix them with the olive oil and half the lemon, peeled and cut into thin slices.
Add garlic, parsley, coriander and the spices.
♦️ ️ Marinate the seasoned pieces of salmon in this flavored oil, and leave them in the fridge for about 30 minutes
♦️ ️Remove the excess marinade, and grill the fish gently on the barbecue or in a pan
♦️ ️Then set aside the fish in baking paper for a few minutes.
♦️ ️Just before serving, pour the fish over a few drops of lemon juice.
♦️ ️Peel and mix the tomatoes.
♦️ ️Peel and grate the garlic cloves.
♦️ Pour a drizzle of olive oil in a pressure cooker and pour in the tomatoes and grated garlic.
♦️ ️Add salt, pepper, turmeric and cumin.
♦️ ️ Mix then add the tomato puree, parsley and chopped coriander.
♦️ ️Then add the drained white beans.
♦️ ️ Add the 2 large glasses of water and mix.
♦️ ️ Close the casserole dish and put it on fire at full power.
♦️ ️When it starts to whistle, lower heat to medium and cook for 25 minutes.
Serve immediately.
